
Last evening was a nice time of fellowship and laughter and meeting new people at the Spring Women's Event at our church. It was fun to see other hostess tables and their ideas. Our table turned out pretty much as we had hoped. We made cream cheese and mint filled strawberries, raspberry lemon cupcakes, coconut/cream cheese frosted cupcakes, and chocolate orange cupcakes. For all you chocoholics, this re
cipe follows.
Cupcakes:
1 Box of dark chocolate super moist cake mix
Orange juice instead of water in cake mix
1 Cup of mini chocolate chips
1 Tsp. of all purpose flour
Frosting:
1/2 Cup butter
2/3 Cup Hershey's Special Dark Cocoa
3 Cups powdered sugar
1/3 Cup orange juice
1 Tsp. vanilla
Zest from 1 large orange
Mix chocolate cake mix according to directions substituting orange juice for the water. Toss the chocolate chips with the flour. Fold them into mixture. Bake according to package directions. Allow to cool 1 hour before frosting. I freeze them to make frosting easier.
For frosting, melt butter, stir in cocoa. Alternately add powdered sugar and orange juice to spreading consistency. Add more orange juice if needed. Stir in vanilla. I used a pastry bag to pipe frosting onto cupcakes.
