I love using fresh herbs when I am cooking. I went this weekend and got a few of my favorites. I plant them in window boxes that are attached to our deck out back. They get lots of warm sun for a good part of the day and seem to love it as much as I do. They always thrive there. This year I got Italian Basil, Parsley, Chives, Rosemary, Oregano, Lemon Thyme, and one of my favorite herbs, German Thyme. I discovered this variety of thyme last year. You should try it for it's very distinct thyme flavor. It brings back memories of the string beans my grandmother and mom always made whenever we had a German meal of sauerbraten, spaetzle, and red cabbage. I've included this simple but delicious recipe if you ever want to try it.
German String Beans
1 lb. of fresh green beans, cleaned and cooked as desired. (I usually steam them)
2 tbsp. of butter
2 tbsp. of flour
2 tbsp. apple cider vinegar
1 small onion chopped fine
1 tbsp. fresh German thyme or dried thyme to taste
Melt butter and cook onion until tender. Add flour and mix until smooth. Add vinegar, whisk until smooth. Add thyme, then add green beans.
