Week 2: Snickers Cupcakes

In honor of my cute youngest boy I made Snickers cupcakes this week. Snickers is his favorite snack food and I always try to have one or two waiting for him whenever he comes home on his breaks. His birthday is this week and I am feeling especially sentimental because I will no longer have a teenager, he is turning 20! How can my cute redhead baby boy be turning 20?! All I can think of is him in his cowboy boots, always on the wrong feet and his dinosaurs that he had in each hand at all times.
I got these at Michael's from the Paula Deen line. They make me happy.
 OK, Gang, I may be batting zero but I will not be discouraged. These were labor intensive and very dry. I do find some comfort in the fact that the reviews for this recipe had all the same comments I have if only I had read them BEFORE I baked them. It also says to bake them 22 minutes which seemed way too long for me but the rule follower in me caved. I need to listen to my inner baker more often. Since they were dry I decided to poke holes in them with a skewer and spoon caramel over them hoping it would sink down into the cake and somehow make them moist. It did somewhat but not enough to make me feel good about giving these cupcakes away.  My supportive husband said they are good. Dry but good. He knows what to say to keep me happy.
This guy stores my measuring spoons and was a gift from my mother-in-law. It is in the Temptations line sold on QVC. Get yourself one!

I used Hershey's Caramel. Many recipes I saw for Snickers cupcakes called for chocolate cake and various frosting and toppings. Worth consideration.
