Week 7: Peanut Butter "Cupcakes"

A few simple ingredients and "Shazam!" you have a spectacular dessert.



This is all the flavors mixing together shouting "You will love me!"

Place in ready-made crust of your choice but seriously, why would you use anything but chocolate?

These ready-made crusts come with their own little lid, so brilliant!
Close your eyes and imagine, imagine with the kind of imagination you had when you were a child and could create anything in your mind you wanted to. What you see is a peanut butter, plate-sized disk of deliciousness. Imagine if you will that this is a cupcake, just larger, not cake, and with no icing. This thing I speak of is called a PIE. OK, it's true, I did not have time to bake cupcakes this week because my oldest, sweet boy is leaving on Saturday to go back to school and his cute girlfriend is coming here to visit for a couple of days before he leaves. There are not enough hours in a day to clean, cook, work and bake so I crossed one of those off my list and made peanut butter pie instead. Oh my goodness, listen to me, this is super easy to make and admittedly, not fancy looking, but so delicious. It tastes like a frozen peanut butter Easter egg. You may think less of me for not baking this week but once you make this pie you will forever thank me for sharing this with you.
I got this recipe from my friend Lauralei. Every recipe I get from her is always super easy, just a few ingredients, but so delicious. I try to complicate things too much, in life in general and also in recipes. It's my own personal burden to bear so don't you worry your pretty little head about that. Just follow her lead and make this, you won't be sorry.

Frozen Peanut Butter Pie

Ingredients
4 oz. cream cheese, softened
1/2 cup milk
2/3 cup peanut butter
1 cup powdered sugar
8 oz. cool whip
1 ready-made pie crust (graham cracker, chocolate, etc.) found in the baking isle

Beat the cream cheese, milk and peanut butter until smooth. Add the powdered sugar and cool whip and mix until smooth and well combined. Pour into pie crust and place lid on top that comes with crust and freeze for at least 12 hours. Remove from freezer for approximately 15 minutes before serving.Warning: you may eat the entire pie yourself if you are a weak person like me.

well well well....just cause you can write fancy words to get others to think your okay without making cupcakes.....YOU CAN NOT FOOL ME!!! now are you every gonna have a more than a two week cupcake making streak? huh are ya????
