Week 12: Andes Mint Cupcakes

One of my greatest joys in life is a cupcake with a beautiful dome on top.

What's better than a blast of mint in the summer? When I saw this recipe for Andes Mint cupcakes it made my heart happy. Growing up, whenever I saw my mom put Andes mints in the grocery cart it meant we were having company. We would tidy up the house and mom would make delicious food for their special friends then and many that they still have in their lives. My mom would make you say, "Martha Who?" She has it all over Martha. Mom has the gift of hospitality. She places a beautiful centerpiece on the table, gets her finest china out, makes soup, salad, a delicous main course and a homemade dessert even though she has bakers at her disposal. No one ever leaves her home not feeling pampered and always very, very full. I am glad that when I got married my parents gave me a set of formal china. It makes me happy whenever I use it. I know alot of young girls don't feel the need to get china or have a formal dining room. I have dreams of my kids coming back home with my adorable grandkids and sitting around a table like my mom's.

Enough of that, let's get down to the business at hand, Cupcakes! I figure I am about halfway through this Cupcakery idea. I think I may have been a little ambitious although I have found oodles of recipes that all sound interesting. Don't worry your pretty little heads, I will not be stopped. It's kind of a given at work now that Thursday is cupcake day. I appreciate that everyone is willing to tastetest them for me or things could be all kinds of bad with my pants size, which we have previously discussed.

This recipe is really good. Not too minty. I didn't use the green food coloring for the frosting. I'm not crazy about eating colored frosting. It just seems wrong. I put ganache inside and on top of the cupcakes. That seems all kinds of right. The recipe can be found here.

oh yum......when you eat one can you suck in cool air? i love that feeling....and i can almost taste them through the computer....mmmmm yum...and i agree, your momma is a great hostess and you are one fine hostess too....i love coming to your home...and we do sit around your table and eat...and eat...and eat....i'm comin up...NOW.....
