Week 21: Chocolate Cupcakes with Peanut Butter Frosting

Oh my, so delicious!

Up close and personal.
I wanted to try this recipe because it is one of the requested flavors for the order that I have in a couple of weeks. Oh my, this is a winner! I don't know many people who don't like this combo. I added mini Reese's Peanut Butter chips to the batter. Sometimes I have good ideas that usually come to me in the middle of the night. This is when I do my best cupcake dreamin'. I used a Barefoot Contessa frosting recipe and boy is it creamy and delicious. Not too sweet, just sinful enough to make you want more.The recipes are below.

Cupcake (adapted from www.yourcupofcake.com)

1 Devil's Food cake mix with pudding
1 cup of sour cream
1/2 cup oil
3/4 cup buttermilk
3 eggs
1 tsp. vanilla
1 cup of Reese's Peanut Butter chips
1 tsp. flour

Sift the cake flour. toss peanut butter chips in flour in separate bowl. Mix the remaining ingredients except the peanut butter chips. Mix well. Add cake mix and stir thoroughly. Add peanut butter chips. Bake at 350 degrees for 17 minutes or until baked.

1 cup confectioners’ sugar
1 cup creamy peanut butter
5 tablespoons unsalted butter, at room temperature
¾ teaspoon pure vanilla extract
¼ teaspoon kosher salt
1/3 cup heavy cream
