Makin' Whoopie, Pies That Is.

I wanted to have a few PA snack foods when Pam and John visited so I made good ol' PA Whoopie Pies. Now I know there is alot of debate about the whoopie pie originating in Massachusetts not PA but that is wrong, just wrong.  It is PA all the way. For further clarification in case you have not been made aware of this debate see this link. Well let me tell  you I managed to bake a little piece of chocolaty heaven. Heaven I tell you! I made them miniature so they look far less dangerous but it only makes it easier to eat say 4 or 5 before even think about it. For all that is good in this world I am going to share the recipe that I made. I baked mine on a baking stone using parchment paper and I think that helped to make the end product perfectly moist and delicious. See the recipe below. Enjoy!

For cakes
  • 2 cups all-purpose flour
  • 1/2 cup Dutch-process cocoa powder
  • 1 1/4 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup well-shaken buttermilk
  • 1 teaspoon vanilla
  • 1 stick (1/2 cup) unsalted butter, softened
  • 1 cup packed brown sugar
  • 1 large egg

    For filling
  • 1 stick (1/2 cup) unsalted butter, softened
  • 1 1/4 cups confectioners sugar
  • 2 cups marshmallow cream such as Marshmallow Fluff
  • 1 teaspoon vanilla
